A bad day.... bake away!

I had a bad day at school, got home, pulled out the entire Tiramisu Cake and a fork. I dug in... my mom just laughed. I ate enough to feel better again but then the rest of the day I wanted sweets, had no energy to work out, but didn't want to ruin any of my actual good eating. So to keep stress at bay, I enjoy baking. I made energy bites. So YUM and the perfect amount of good for you, energy filled protein & fiber, and a bit of sweetness. Here's my recipe:

Energy Bites:
1 cup quick oats
2/3 cup Nature's Path Pumpkin Flax Granola
1/2 cup white chocolate chips
1/2 cup creamy peanut butter
1/3 cup honey
1 teaspoon vanilla

Mix all the ingredients together and chill in fridge for about a half hour. Then roll into balls and keep stored in fridge for up to a week... if they last that long ;-)

Now I am going to get to my workout! Started a 12 day Butt & Abs challenge today. I will post my schedule later this week.
